Preheat oven to 425°F (220°C). In a large bowl, toss potatoes with 1 tablespoon olive oil, salt, and pepper.
Spread potatoes on a large sheet pan. Roast for 15 minutes.
Add sausage, bell peppers, onion, and zucchini to the bowl. Toss with remaining olive oil and all seasonings. Spread on the sheet pan with potatoes.
