Press tofu to remove excess water, then cube into 1-inch pieces. Heat 1 tbsp sesame oil in a large wok or skillet over medium-high heat. Add tofu and cook until golden brown on all sides, about 8 minutes. Remove and set aside.
In the same pan, add remaining sesame oil. Add garlic and ginger, stir-fry for 30 seconds. Add broccoli and bell peppers, stir-fry for 3-4 minutes. Add snap peas and cook for another 2 minutes.
Return tofu to the pan. In a small bowl, mix soy sauce and sriracha. Pour over the stir-fry and toss everything together. Cook for 1-2 minutes until heated through. Garnish with green onions and serve immediately.
